|You will need:
Preheat oven to 350°. Combine coconut milk and sweetened condensed milk. Reserve ¾ cup of liquid, and refrigerate the rest. Combine all dry ingredients except nuts. Add all wet ingredients and blend on medium speed until all ingredients are moistened (Do not overmix). Stir in nuts and pour mixture
into a large greased, floured loaf pan. Bake 55-65 minutes, or until top is golden brown, and a wooden toothpick inserted in the center comes out clean.
- 2 1/2 Cups flour
- 1 Cup sugar
- 3 1/2 teaspoons baking powder
- 3/4 teaspoons salt
- 3 Tablespoons oil or applesauce
- 1 egg or 2 egg whites
- 1 Cup chopped macadamia nuts
- 1 can (12 oz.) coconut milk
- 1 can (14 oz.) sweetened condensed milk
- 1 mashed banana (large)
While bread is still warm, serve slices on plates, and pour the chilled coconut mixture over them. May be topped with additional nuts.
