Susan's Broccoli/Cheese Soup

Ingredients:
  • 3/4 of a lrg (16oz.) bag of egg noodles - prepare as directed
  • 1/4 c. butter 1/4 c. chopped onions
  • 2/3 c. flour
  • 1 lrg. can of chicken broth or 3-4 10 1/2 oz. cans
  • 1 1/4 c. finely chopped carrots
  • 1-16oz bag frozen broccoli, thawed and chopped in food processor (may use 2-16oz bags)
  • 1/2 lb. Velveeta cheese, cubed
  • 2 c. half and half
  • 1-2 C. water
Melt butter, saute onions until glossy. Gradually add flour. Add broth and stir until smooth. Add carrots, broccoli, cheese, half and half and water (to desired consistancy). Add noodles after cheese has melted. Cook 15-25 min. Continue stirring.
