Combine ground beef, ground pork, bread crumbs, egg, cajun spice and
1/8 cup BBQ sauce. Mix until combined, but don't overmix.
Shape into burgers. Make the burgers whatever size suits you, but
flatten them out so that they're an even thickness and can cook through
evenly.
Lightly oil grill.
BBQ burgers over medium heat until cooked through. Brush with BBQ
sauce once during cooking and once again just before burgers are removed
from the grill.
Serve with all the fixin's and more BBQ sauce (see below)
BBQ Sauce (combine all ingredients):
1 1/2 cups ketchup
1/4 brown sugar
1 Tbsp cajun spice
1/4 cup minced onion, lightly sauteed
6 - 8 cloves minced garlic, lightly sauteed with the onion
2 Tbsp worchertershire sauce
2 Tbsp minced parsley
The fixin's:
Big, fresh buns. Serve some white and some brown buns.
Whipped butter.
Mustards including standard mustard and some other varieties like
german mustard, hot mustard or honey mustard.
Ketchup and hot ketchup (prepared or combine some ketchup with a little
tabasco sauce)
Relishes, red and green
Sliced tomato, onion, green pepper, mushrooms, cucmber
Shredded lettuce
Sliced cheese - not the processed stuff, but real cheese. Serve a
few different types.
