Chocolate Muffins

  • 6 ounces chocolate (choose milk chocolate or semi-sweet chocolate)
  • 1/3 cup butter
  • 3/4 cup buttermilk
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 tsp vanilla
  • 1 2/3 cups flour
  • 1 tsp baking soda
  • Preheat oven to 400 degrees F.
  • Spray a muffin pan with spray oil or line with paper liners.
  • Melt chocolate and butter in the microwave or in a small pan over very low heat.
  • Set aside to cool for 10 minutes.
  • With a fork, lightly beat the egg.
  • Combine the cooled chocolate and butter with the egg, buttermilk, sugar and vanila in a small bowl. Beat until well blended.
  • Sift flour and soda together in a large bowl.
  • Make a well in teh center of the flour and pour the wet mixture into the well.
  • Mix until just combined. Do not overmix.
  • Spoon batter into muffin tins, fill each cup 2/3 full.
  • Bake for 20 to 25 minutes.
  • Remove from over and let stand 10 minutes. Remove from pans and cool completely on wire racks.
  • If desired you can add 1/2 cup chocolate chips or chopped nuts to the batter just before spooning into the pan.
