Choose a selection of ripe fruit. Try some of these:
pineapple
strawberries
cantaloupe
melon
grapes
kiwis
star fruit
grapefruit or orange sections
Avoid apples, bananas, peaches and pears because they turn black after
they're cut. If you'd like to use these fruits anyways, wash and cut them,
place them in a bowl and toss them with lemon juice to keep them from
turning black.
8 oz. cream cheese
1/2 cup sugar
1/2 cup berries of your choice. We like raspberries or strawberries
best.
Method:
Wash, peel and cut fruit.
Arrange fruit on a chip-and-dip plate, leaving the center open for
a bowl of dip.
In a food processor, puree the berries for just a few seconds. Remove
berries from food processor.
Place cream cheese and sugar in food processor (you don't need to
wash the bowl first). Process until light and well combined, stopping
to scrape the sides every now and then.
Add berry puree to the cream cheese mixture and process until combined.
Transfer to a bowl and place the bowl in the center of the fruit plate.
Refrigerate until serving time.
NOTE: if you're pressed for time, you can serve pre-packaged
strawberry cream cheese in place of home made dip. We recommend that
you whip the cream cheese a bit so that it's light and fluffy.
