Orange Loaf Glazed with Marmalade

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1 cup white sugar
  • 2 eggs
  • grated rind from one orange
  • 1/2 cup fresh orange juice
  • 1/2 cup marmalade
  • Spray a 9" x 5" x 3" loaf pan with spray oil.
  • Preheat oven to 350 degrees F.
  • Sift flour, baking powder and salt together in a bowl.
  • Using a mixer, cream butter 1 cup of sugar together until light.
  • Add eggs one at a time, beat after each addition.
  • Add orange rind and 1/2 cup juice.
  • Add flour mixture and stir until just combined. Do not over mix.
  • Pour batter into prepared pan.
  • Bake for 1 hour, or until done.
  • Remove loaf from oven and immediately spread marmalade over the top of the loaf.
  • Cool 10 minutes, then remove loaf from pan and place on wire rack to cool.
  • Serve with marmalade butter: whip 1/2 cup butter until light, then whip in 1/8 cup marmalade.
