1/4 cup of the following dry mixture:
1 cup flour
1 cup instant nonfat dry milk
1 1/2 tsp salt
1 cup half-and-half (or whole milk)
2 tbsp butter
1/2 - 1 cup freshly grated parmesan cheese.
In a saucepan, over a medium heat, gradually add milk to the dry mixture
above. Stir contstantly. The mixture will thicken in about 2 minutes. Reduce
heat to low and simmer, stirring constantly for about 2 minutes more, stirring
in the grated cheese.
Variations:
Saute chopped mushrooms in butter and add to the sauce in the last
2 minutes of cooking. Great over chicken or beef.
Stir in 2 tbsp spicy brown mustard when you add the milk. Great over
pork chops.
Add 1/2 clove of pressed garlic to the mixture after you add the milk.
Great over anything!
Low Fat White Sauce
This dry mixture is less fattening
than regular white sauce, and very easy to make. Just add boiling water!
Ingredients:
1 cup flour
1 cup instant nonfat dry milk
1 1/2 tsp salt
Combine all ingredients in a jar, cover and store at room temperature. Yield
is about 2 cups dry mix, or enough for 8 cups of sauce. Stir one part dry
mixture into 4 parts water and simmer for about 4 minutes or until the mixture
thickens.
